Sometimes I feel a little bad that a lot of the recipes I contribute to our blog are breakfast recipes. But then I remember how awesome breakfast is, and I don’t feel as bad anymore…
So, here’s yet another one for you.
I’ve kind of been trying to cut back on the grains in my life, namely those of the white and overly-processed kinds, if you catch my drift :p Consequently, I’ve been experimenting with a number of grain-free breakfast recipes, and this led me to finallly try out the banana pancake recipes I kept seeing loitered across my pinterest account.
And with a little bit of tweaking to meet my personal preferences, I think the following recipe is really quite satisfactory ;)
Chia Flax Banana Pancakes
Yield: 6 small pancakes
1 banana, mashed
1 tsp. maple syrup
¼ cup flax seeds
⅛ cup chia seeds
½ tsp. cinnamon
In a small mixing bowl, combine all ingredients and blend until the banana has been thoroughly broken down and all ingredients are evenly incorporated in the batter.
Heat a skillet on medium heat and add a little coconut oil to keep the pancakes from sticking.
Pour ¼ cup of batter into skillet at a time. Cook until you can see the edges beginning to crisp up a bit, then flip and cook for about 2 minutes. Repeat this until all batter is gone.
Serve warm with butter, peanut butter, syrup, or the toppings of your choice!
