Sometimes I find myself on a chia kick. Can you really blame me though? I mean, what's not to love about those slimy, magical little liquid-absorbing bitties? And when you mix them with the creamy goodness of raw, whole milk like I prefer, you can't help but get a little weak in the knees...aaaaaaaaand, that's where this recipe comes in. This makes a really hearty breakfast, but I would be lying if I said I hadn't eaten this for lunch a time or two, and topped it with almonds and a variety of other protein-rich nuts/seeds, when I needed something SOLID to get me through the rest of afternoon ;)

You can pretty much top it with anything you like, this just happens to be the original recipe I developed, and it's pretty tasty if I do say so myself! The pomegranate seeds give it an especially springy-ness as well ;)

Cha-Cha Chia Pudding for One

Servings: 1

  • 1 c. milk of your choice
  • ⅓ c. chial seeds
  • 1 ½ tsp. Coconut sugar
  • ¼ c. granola
  • ⅛ c. pomegranate seeds

In serving bowl, combine milk, sugar, and chia seeds. Let sit 10 minutes to allow seeds to fully absorb the liquid. Top with granola and pomegranate seeds. Stir just before eating, and enjoy!
