I have a beautiful husband. Not just in his unresistable, chiseled form...But in his ability to COOK! Man, oh man, am I thankful for a man who knows where its at in the kitchen! And just the other morning, I was blessed with this delicious frittata, crafted by the hands of an angel. A very oven-savvy angel…
David’s Heavenly Frittata
- 9 large eggs
- ¼ cup organic whole milk
- ¼ cup water
- 1-2 cups shredded cheddar cheese (depending on your preference of cheesiness)
- 1-2 Tbsp olive oil
- 1 yellow onion, diced
- 1 crown of broccoli, chopped
- 8-10 mini sweet bell peppers, diced
Preheat oven to 350 degrees. In a large mixing bowl beat together eggs, milk, and water.
Heat skillet on medium to high heat with 1-2 Tbsp olive oil. Saute onions until golden brown, about 5-7 minutes. Add in sweet peppers and broccoli. Season to taste. Saute an additional 3-5 minutes, until vegetable color brightens. Set aside.
Mix sauteed vegetables with egg mixture. Add in cheese. Pour into a lightly greased casserole dish or cast iron pan.
Bake for about 30 minutes or until center is firm and top is golden brown. Enjoy!
