David’s Heavenly Frittata

  • 9 large eggs
  • ¼ cup organic whole milk
  • ¼ cup water
  • 1-2 cups shredded cheddar cheese (depending on your preference of cheesiness)
  • 1-2 Tbsp olive oil
  • 1 yellow onion, diced
  • 1 crown of broccoli, chopped
  • 8-10 mini sweet bell peppers, diced

Preheat oven to 350 degrees. In a large mixing bowl beat together eggs, milk, and water.

Heat skillet on medium to high heat with 1-2 Tbsp olive oil. Saute onions until golden brown, about 5-7 minutes. Add in sweet peppers and broccoli. Season to taste. Saute an additional 3-5 minutes, until vegetable color brightens. Set aside.

Mix sauteed vegetables with egg mixture. Add in cheese. Pour into a lightly greased casserole dish or cast iron pan.

Bake for about 30 minutes or until center is firm and top is golden brown. Enjoy!
