For this busy mama, getting protein in my diet is a challenge. I hardly have enough time to cook an egg, let alone make a full meal during the day. I need something that’s quick and easy to make, and that has plenty of nutrients to keep me energized throughout the day. I need a hero...I’m holding out for a hero ‘til the end of the night...And now that song’s stuck in my head.

So when my mom introduced me to these easy-to-make, wonderfully delicious and nutritious protein bars, I knew that my hero had arrived. If you’re looking for some saving--in need of a yummy, yet easy snack--these bars are the thing for you! Hope you enjoy!

Blueberry Pumpkin Seed Protein Bars

  • 2 cups soaked and dehydrated almonds
  • ½ cup ground flax seeds
  • ¾ cup shredded coconut
  • ½ cup peanut butter
  • Pinch of salt
  • ½ cup melted coconut oil
  • ¼ cup raw honey
  • 1 Tbsp. vanilla extract
  • ¼ cup granola of your choosing
  • ¼ cup pumpkins seeds
  • ¼ cup dried blueberries

 

In a food processor, mix together almonds, flax seeds, shredded coconut, peanut butter, and salt, until combined. In a saucepan, melt together the butter, honey, and vanilla. Pour the melted mixture into the food processor and pulse until completely combined. Next, pour the mixture and spread evenly onto a baking sheet lined with parchment paper, using a spatula or the back of a large spoon. Refrigerate bars for 30 minutes. Cut to desired size and snack away!

*Store in refrigerator.
