I first tried something similar to these little bitties about a year ago, and had wanted to make my own every since. Now that I have made them, and experienced for myself the immense ease of doing so, I am kind of flabbergasted that it took me this long! I promise you will find these energy bites both filling and delectable. They are the perfect little booster snack after a long run or workout! Or dress them up a little with some chocolate drizzle and voila! Dessert! 

Homemade Energy Bites

Yields 24 balls

  • 2 cups almonds (preferably soaked and dehydrated)

  • 2 ½ cups pitted dates

  • 2 cups shredded coconut

  • 1 tablespoon coconut oil

  • Optional add-ins: sunflower seeds, flax seeds, dried fruit, chocolate chips, etc.

In food processor, process almonds until they reach a finely ground consistency. Add dates, coconut, and oil. Process until mixture forms a sticky “dough” and can be easily shaped. At this point, knead your add-ins into the mixture until they are evenly distributed throughout. Roll mixture into 1” balls in the palm of your hand. Place on a lined baking tray and refrigerate for about 3 hours. Store balls in refrigerator.
